LAFAYETTE, LA — As the world continues to seek healthier lifestyles, one humble vegetable has risen to the top of the USDA’s recommended list: kale. Highlighted in the MyPlate dietary guidelines, kale stands out as one of the most nutrient-rich, sustainable foods available today. According to the U.S. Department of Agriculture, kale and other dark leafy greens should make up a generous portion of our daily intake—reflecting a divine provision for both nourishment and stewardship.
Hearts and Bodies Strengthened by God’s Creation
Kale is part of the Brassica family, sharing roots with broccoli, Brussels sprouts, and cabbage. Each leaf of kale is packed with antioxidants, vitamins A and C, fiber, protein, and essential fatty acids—all with minimal calories. In God’s wisdom, this green vegetable even outshines many animal products in nutrition: per calorie, kale has more iron than beef and more calcium than milk. As Psalm 104:14 declares, “He makes grass grow for the cattle, and plants for man to cultivate—bringing forth food from the earth.”
A Model of Sustainability and Stewardship
One of the most compelling reasons to embrace kale is its environmental impact. It requires just 23 gallons of water to produce a pound—compared to over 2,400 gallons for the same amount of beef. This aligns with our calling to be responsible caretakers of creation. In Genesis 2:15, we’re reminded that “The Lord God took the man and put him in the Garden of Eden to work it and take care of it.”
