A New Season of Provision: “Boil and Go” Brings Cajun Convenience to Acadiana
LAFAYETTE, La. — Acadiana residents will soon have a new, convenient way to enjoy one of the region’s most beloved traditions. The Cajun Table is preparing to open a drive-thru-only crawfish concept called “Boil and Go” at 6974 Johnston Street in Lafayette. Located between Lafayette and Maurice, the new site sits closer to the Suire family’s crawfish ponds, allowing for quicker service and fresher offerings. As Ecclesiastes 3:1 reminds us, “There is a time for everything, and a season for every activity under the heavens,” and for many in Acadiana, crawfish season is a time of joy and gathering.
Built on Stewardship of the Land and the Catch
Unlike traditional restaurants, Boil and Go will focus solely on what the Suire family does best. There will be no indoor dining and no fryer—only boiled crawfish and classic boiled sides prepared with care. Lauren Suire, who co-owns The Cajun Table with her husband, crawfish farmer Sean Suire, says the concept is designed to serve families efficiently without sacrificing quality. This commitment to stewardship reflects Genesis 2:15, which calls us to “work it and take care of it,” a principle the Suires live out by sourcing directly from their own ponds.
From Food Truck to Community Favorite
Sean Suire, a Vermilion Parish native, opened The Cajun Table’s brick-and-mortar location at 4510 Ambassador Caffery Parkway in 2017 after the success of his boiled crawfish food truck. Since then, the restaurant has become a staple for Cajun cuisine in Acadiana. It has earned multiple local honors, including recognition in The Acadiana Advocate’s 2024 crawfish bracket for “best boiled crawfish.” Proverbs 22:29 speaks to such diligence: “Do you see someone skilled in their work? They will serve before kings.”
First to the Season, Faithful in the Process
Because the Suires harvest from their own ponds, they are often among the first to sell boiled crawfish each year—sometimes as early as Black Friday. That early start has become a hallmark of their business and a blessing to eager crawfish lovers across the region. Their approach reflects Proverbs 10:4, which teaches that “diligent hands bring wealth,” not only in financial terms, but in trust and reputation within the community.
Looking Ahead with Vision and Purpose
Lauren Suire shared that Boil and Go is expected to open in February or March, and that drive-thru locations have long been part of the family’s vision. With an eye toward future expansion across Acadiana, she continues to explore potential locations through her real estate investment company, LA Hope Properties. As Proverbs 16:3 encourages, “Commit to the Lord whatever you do, and he will establish your plans.”
A Prayer for Acadiana
Heavenly Father, we thank You for the hands that work the ponds, the families who carry on tradition, and the communities that gather around the table. We pray blessings over The Cajun Table and the new Boil and Go location. May it provide honest work, nourishing food, and moments of joy for families across Acadiana. Watch over the Suires and all who labor in this season, and let their work continue to honor You and bless others. In Jesus’ name, Amen.
