LAFAYETTE, La. — For nearly a quarter-century, Leonard Louvierre has been a familiar and respected figure in Lafayette’s restaurant community. As the leader of Zea Rotisserie & Bar, Louvierre has helped create more than a successful dining destination—he has cultivated a culture centered on service, teamwork, and respect for others.
Recently featured on the Discover Lafayette podcast with host Jan Swift, Louvierre reflected on the realities of restaurant ownership and the principles that have guided his career. While many people see the finished product of a thriving restaurant, Louvierre emphasized that success comes through dedication, sacrifice, and a genuine love for serving people.
His perspective reflects Colossians 3:23, which teaches, “And whatsoever ye do, do it heartily, as to the Lord, and not unto men.” Whether preparing meals, managing employees, or greeting customers, Louvierre believes excellence begins with a servant’s heart.

Operating a restaurant requires much more than creating great food. Louvierre explained that owners must embrace every aspect of the business, including employee management, scheduling, financial pressures, long hours, and customer feedback.

“You have to hire people better than you,” Louvierre shared, recognizing the importance of trusting others and empowering them to succeed.
His approach mirrors the biblical wisdom found in Proverbs 11:14: “Where no counsel is, the people fall: but in the multitude of counsellors there is safety.” Strong leaders understand the value of surrounding themselves with capable people and working together toward a shared goal.

Even after years in the business, Louvierre continues to work nights and weekends. He still spends time in the dining room speaking with guests, ensuring quality service, and supporting his staff.
Rather than viewing his position as one of status, he sees himself as someone called to serve others. That mindset has earned him respect throughout Acadiana’s hospitality industry and helped create lasting relationships with employees and customers alike.
Jesus demonstrated the ultimate example of servant leadership in John 13:14-15 when He washed the feet of His disciples. Christ taught that true leadership comes through humility and a willingness to serve others before oneself.
Louvierre’s commitment to remaining engaged in the daily operations of his restaurant reflects that same principle of leading through action rather than words alone.
